L’histoire
Dans les montagnes d’Acevedo, au cœur de la région de Huila en Colombie, William Ome Calderón cultive du café depuis plus de vingt ans. Issu d’une famille de producteurs, il a développé à La Esmeralda une approche particulièrement attentive à chaque variété et à son potentiel en tasse.
Qué Más? est issu du Caturron, une variété colombienne encore peu répandue. William accorde une attention particulière à son traitement afin d’en révéler toute la complexité. Le café suit notamment une fermentation prolongée avant un séchage lent sur patios.
